Review: EdgeWild Restaurant & Winery in Chesterfield

To say that the perimeter of Chesterfield Mall lacks dining options is a truism. Check that: There are options, they just happen to be the least common demoninators of the restaurant equation – fast-casual chains, bland food couched in trendy lingo, a business plan designed to fill you up and turn tables.

And then there’s EdgeWild, the new winery/restaurant by Chris LaRocca and Dee Dee and Andy Kohn that changes the entire equation (and expectation) of what a restaurant near a suburban mall parking lot can aspire to.

LaRocca is a visionary artist among restaurateurs; I suspect half of St. Louis has dined in a restaurant he has conceptualized. Best known for the erstwhile Crazy Fish restaurants, Tomatillo and Sage, he’s also launched Triumph, Kota Wood Fire Grill and Mile 277 Tap & Grill. In February, he opened Crushed Red in Clayton.

Helming the kitchen is Aaron Baggett, whose tour of duty includes stints at both Triumph and Kota. Jason Tilford, chef at Milagro Modern Mexican, even got in on the act, consulting with LaRocca and Baggett on the menu. The resulting carte is cutely laid out in a wine theme: First Press for starters, A Little Green for salads, Full-Bodied Entrees … you get the idea. Clearly, there are a lot of top players involved here, so there’s a lot riding on this sprawling 12,000-square-foot former Bahama Breeze (speaking of least common denominators).

Judging by the crowds, things are off to a roaring start, with two-hour waits not uncommon if you don’t have reservations. Navigating this massive space isn’t for the directionally impaired. But once inside, I found that EdgeWild had a lot to offer: a long, open kitchen; a wine and chocolate tasting bar (offering both house-made and Bissinger’s treats); two large dining rooms; a covered porch; an enclosed fire pit; a bar-dining area; and a combination barrel room-private dining table for large groups. With dark wood and high-beamed ceilings, the space has all the elegant rusticity of a California wine country chñteau (or so I imagine). But along with this much real estate comes decibels approaching indoor stadium levels. On one visit, the restaurant was thronged with clusters of boisterous women on a gal-pal night out. And it was the middle of the week. Another night it was masses of teens dressed in short dresses and uncomforable suits, chatting, texting, having a good time.

EdgeWild is a bonded winery, so there are barrels of aging wine tucked about the restaurant. It also sells wine: 29 are available, 25 under the EdgeWild and Chandler Hill labels. Andy Kohn acts as wine négociant, traveling to California, Washington and Oregon, and contracting with winemakers to make and label the wines for the restaurant. Of the Missouri wines, most are sweet, including four fruit varieties. Labeling its own wine means EdgeWild can offer cheaper prices to the diner: Bottles run $24 to $44, with glasses going between $6.25 and $11.50.

As is the trend of late, a lot of the menu touts comfort food gone upscale. Not only is there meatloaf, it’s made from bison and wrapped in pancetta. Two generous, juicy, savory, seared slices came atop a mound of creamy polenta with some roasted haricot verts scattered about. A dousing of reduced rosemary-infused jus and a sprig of the fresh herb capped this homey dish. The Vintner’s Steak, a grilled center-cut strip, arrived medium rather than the requested medium-rare but didn’t suffer much from the few extra moments on the heat. It was still juicy and tender, the dollop of garlic butter melting into the bed of garlic mashed potatoes for more rustic elegance. The comped soft chocolate chip cookie topped with Serendipity salted caramel ice cream more than made up for the goof.

Even salmon, topped with a bacon-shallot “hash” and oven roasted on an applewood plank, got the comfort food treatment. The fish was moist and fresh (not previously frozen. I always ask, as should you.), absorbing just a whisper of applewood flavor. It could’ve easily stood on its own, but sloshing it with apple beurre blanc and plating it with more tenderly roasted haricot verts and creamy, cheesy Parmesan polenta tied everything together nicely. Chicken paillard, a boneless breast pounded thin and mounded with fresh spinach and arugula drizzled with a startlingly delicious lemon dressing, was a salad and entree in one. While the chicken wasn’t dry, a risk with pounded meat, it was paper-thin, as if run through a pizza roller. A side of butternut squash risotto was slightly sweet, very creamy, perfectly chewy and well worth the caloric splurge.

There are seven enticing salads, but even the basic house is worthy of mention: loads of mixed greens, cherry tomatoes, house-made croutons and a zippy red-grape dressing with a goat-cheese fritter on top and a thick focaccia slice on the side. It’s impressive once you realize that the kitchen makes its own lavash (cracker bread), crostini and spicy-sweet mustard for the charcuterie board – a lavish spread of candied walnuts, pistachios, figs, dried dates and apricots, grapes, Serrano ham and salami. (While the meats aren’t house-cured, they are from local salumerias Volpi and Salume Beddu.) The board makes for a great nosh for two paired with a salad and some wine. The Thai tuna tacos are also good for a light bite, featuring thick slices of ahi tuna seared rare and stuffed into three triangle-shaped blue corn tortillas, topped with pickled red pepper and crunchy julienned vegetables, and dressed with a red-curry aioli for edgy heat.

With 357 seats to fill, you need to train a lot of servers … and keep them trained. Service was capable and eager but short in some areas, like one waiter who was quick to offer tastes of wine rather than describing them first. Or another who was unsure of the night’s specials, “That’s a good question. I missed the meeting.”

Nothing has been radically reinvented at EdgeWild. But in a sea of suburban mediocrity, good cooking with just enough edge and wildness plus decent, affordable wine and an atmosphere with myriad options equals an equation worth the effort.

Although he loves to cook, Michael Renner doesn’t think he’d look natural in a chef’s hat.

Angama Mara

One of the best parts of traveling is dining in spectacular new settings. The pastries seem a bit sweeter in a Paris cafĂ©, just as the pasta tastes better among the rolling hills of Tuscany . The truth is, you won’t find a more memorable place to dine than on safari in Africa.

On a recent trip to Zambia, at the Time + Tide Chinzombo and Time + Tide Mchenja luxury camps in the stunning South Luangwa National Park, I experienced daily out-of-this-world dining experiences, all between game drives to spot the Big Five.

From hors d'oeuvres along a hippo-filled river to a private moonlit dinner with baboon guests, these spectacular meals on safari are worth adding to your bucket list.

Pop-Up Bar in the Bush

When you are miles away from civilization and you're closer to lions than other humans, you might not expect to find carefully crafted cocktails. But that's precisely what awaited us during an evening game drives. Our guide, Andrew, pulled over in the middle of the bush, stating it was time for an evening drink. But there was nothing in sight except warthogs, impalas, and crocodiles.

He instructed us to get out of the Jeep, and we watched as he transformed the hood into a pop-up bar. The driver pulled down a built-in table, laid a tablecloth on top, and grabbed bottles of wine and spirits from a cooler. Meanwhile, another camp staff member took our drink order and prepared a gin and tonic for me, a whisky neat for my husband, and a mango mocktail for my four-year-old son. We sipped on them as we watched hyenas stroll and past birds serenade us.

Hors D'oeuvres with Hippos

I've been to lovely cocktail hours in historic mansions and glam New York City bars. But the evening setup along the hippo-filled Luangwa River might be the best one yet. The Time + Tide Chinzombo team surprised everyone staying at the camp with a full spread of hors d'oeuvres and pink, rose-infused gin cocktails that perfectly matched the sunset as hippos hummed and huddled in the water nearby. 

One team member made a fire to pop fresh popcorn in a pot; fresh-baked sausage-stuffed bites and mini quiches lined the table with camp-grown ingredients. (A full bar was also available.) I couldn't think of a better way to end the day before embarking on a night game drive that included two baby leopard sightings. 

Private Moonlit Dinner with Elephants

My seventh wedding anniversary coincided with our stay at the cell phone-signal-free Time + Tide Mchenja and the full moon. So, as a romantic surprise, the team set up a private three-course dinner on the riverbank in front of our tent. A dedicated waiter started the meal by serving chilled champagne as the moonlight and a single candle acted as our lighting for the evening. After that, we sipped on soup, savored grilled tilapia with rice and a savory sauce, and finished with a cheesecake for dessert. But, if that wasn't enough, three elephants decided to join as our dinner guests. Luckily, they didn't want to ruin our romantic moment and opted to munch on the nearby trees instead.

Breakfast with Giraffes

In Zambia, I enjoyed a made-to-order omelet as warthogs dug in the grass and hippos made their morning groans. One of the most talked about safari breakfast experiences, however, is at Giraffe Manor in Kenya. The boutique hotel, set in a 1930s manor house, is a common stopover for guests headed out on safari in the Serengeti. But, besides the classic four-poster beds and vintage decor, guests love the four-legged residents. Here a herd of giraffes frequents the manor for breakfast, sticking their heads into the windows as you sip a cup of coffee. I'm not sure a morning meal can get wilder (and I live with a toddler 
 named Wilder). 

A Movie-Worthy Picnic

At the Maasai Mara Game Reserve in Kenya, you can book a movie-worthy private fĂȘte champĂȘtre. Luxury lodge Angama Mara offers an Out of Africa picnic for guests who want to relive the famous romantic flick starring Meryl Streep and Robert Redford. A checked blanket, pillows, canvas chairs, and a wicker picnic basket filled with pastries and coffee or sparkling wine and appetizers await on the actual kopje used in the movie poster. Be swept off your feet while taking in sweeping views.

We’ve paired delectable South African wine with an exhilarating safari, creating one of the most exciting wine vacations in the world!

In the shadow of Table Mountain in the Western Cape lies South Africa’s famed wine country. The first vines were planted by the Dutch governor of Cape of Good Hope back in the 17th century. Thanks to its dry, mountainous climate, the region is one of the world’s top ten largest wine producers and is known for its incredible Chenin Blancs, Bordeaux-style blends, Cabernet Sauvignons, and native Pinotages.  We’ll stay in the cosmopolitan city of Cape Town and the university and wine town of Stellenbosch.

You’ll not only learn about a variety of incredible wines but of South Africa’s history and culture as they are intrinsically intertwined. The country is truly one of the most amazing lands on the earth and you will be inspired by its music, its people, and its culture.

After we’ve sipped and savored our way around the Western Cape, we’ll hop on a plane and head East for a thrilling safari, just outside Kruger National Park. There’s nothing like sitting in an open Land Rover as your ranger and spotter track a pride of lions or a herd of elephants. It’s an incredible event and something everyone should have the opportunity to experience at least once in a lifetime. We have never seen someone unimpressed with a safari.

Tour Itinerary

VA Waterfront Cape Town South Africa

We will then head back to our hotel, which is situated near the famous V&A Waterfront. You’ll have free time to walk around and explore the many attractions the waterfront has to offer, including local shops, museums, and an aquarium, or just stroll along the shoreline taking in the views of the water to one side and Table Mountain on the other.

Tonight we will enjoy a scrumptious dinner at the Sevruga Restaurant . Cape Town and the Winelands are veritable foodie paradises. The region’s history, along with global food trends, means that there are several dishes you have to try when visiting the Mother City – whether it’s traditional South African barbecue, wild game meat or fine dining cuisine.

South Africa Wine Tour Steenberg

After enjoying spectacular views, you will explore the Constantia Wine Valley and visit the renowned Groot Constantia Wine Estate , established in the late 1600s. The granite soils and steep slopes of the Constantiaberg mountain provide the setting for 100 hectares of vineyards. The area’s terroir is suited to both red and white varieties. We will enjoy a phenomenal chocolate and wine pairing tasting.

This experience will be followed by delicious lunch at the Estate. Cape Town’s cuisine is all about fresh, locally sourced ingredients rather than a particular style of cooking – and why not, when it is surrounded by fertile farmlands and pounded by a bracing Atlantic ocean

In the late afternoon, we will celebrate the vibrant diversity of Cape Town’s special Gin variety with its distinctly South African flavor reflecting the region’s biodiversity. Here you will enjoy a craft gin and cocktails tasting. Woodstock Gin Company specializes in quality fine bush and herbs-infused gin. Only the finest natural ingredients are sourced to produce gin with subtle undertones of buchu and wild rosemary, among others.

You’ll then have a bit of free time to explore the V&A Waterfront, stroll along the histoic streets, do some shopping, and grab dinner on your own.

Our journey to the magnificent Cape of Good Hope takes us along the scenic Atlantic seaboard coastal road. We pass the pristine beaches of Clifton and Camps Bay with their soft white sand and azure blue water. The 12 Apostles Peaks rise above the road on one side, while sheer cliffs and incredible boulders drop into the icy Atlantic Ocean on the other side.

Our first stop is the Cape Good Hope Nature Reserve , which offers breathtaking views. This area is home to amazing Protea flowers, many different species of African fauna like the Cape Mountain Zebra, and mischievous families of baboons, curious ostriches, and jumping antelope. These creatures might even give you a show while you enjoy lunch at the famous local seafood restaurant with splendid views of False Bay. We will visit Boulders Beach to see the African penguins before arriving at the naval base of Simonstown, and then heading to Cape Town for a relaxing evening in the “Mother City”, with dinner on your own.

South Africa Stellenbosch Winery

Today we will spend the day in the remarkable Stellenbosch Winelands. We check out and depart this morning for the Stellenbosch wine region, a fertile river valley boasting a mild Mediterranean climate with rainy winters and hot summers – ideal for growing the grapes that make this area so famous. Stellenbosch is regarded as the wine capital of South Africa. Hosting more private cellars than any other area, Stellenbosch is also the center of viticulture and oenological research and training. The extraordinary natural settings combined with world-class wine-tasting experiences and cuisine will have you falling in love with this area.

Today is dedicated to South Africa’s exceptional and unique local wine grape variety – Pinotage. Our first stop is a wine tasting at the Kanonkop Winery , the leading estate in growing and producing world-class Pinotage.

Afterward, we’ll head down the hill to Jordan Winery , owned by Gary and Kathy Jordan for the past 37 years, where you’ll have a chance to lounge on their stunning patio while grabbing lunch on your own. We’ll reconvene to learn about their terroir and taste their impressive lineup of wines before taking a short walk to a lavender farm.

We’ll then shuttle the rest of the way into town and check into our hotel. Stellenbosch is a university town with very Dutch roots and fantastic Cape Dutch architecture. Set against majestic mountains, Stellenbosch is a fun city with that will entrance you. Tonight, we’ll enjoy a delicious dinner at the Oude Werf Restaurant by renowned South African Chef Jeromy Joubert.

South Africa Winery Franchoek

We start with a private tasting at the beautiful  Anthonij Rupert Winery   in their historic and recently refurbished Manor House, located just beneath the jagged peaks of the Groot Drakenstein Mountains.

The lunch will be hosted by Richard Carstens, one of South Africa’s Top chefs. Nestled at the foot of the magnificent mountains Franschhoek is a Wineland’s town, unlike any other with the atmosphere of a bygone era bringing a sense of gracious, unhurried living. 

Our next stop will be Chamonix Wine Farm , situated high above the fertile Franschhoek valley in the heart of the Cape Winelands, with a history stretching back nearly 350 years. 

The day’s final stop is Haute Cabriere , housing the iconic Chardonnay and Pinot Noir. You will enjoy a tasting while learning about the French Huguenot who established the farm in 1694, Pierre Jourdan.

Dinner tonight is on your own back in Stellenbosch, giving you a chance to explore the city on your own. We can make recommendations for some great local restaurants!

Fairview Winery Paarl

Paarl is situated beneath a large granite outcrop, formed by three domes. Paarlberg (in English, “Pearl rock”) has a smooth surface that glistens in the early morning light. This area is famous for its red wine. Red varieties produce a medley of fruit with serious structure and richness in single-varietal wines and blended wines.

We’ll start with a delightful sustainable wine and cheese pairing at the  Fairview farm and winery .

We’ll then make our way over to Tokara Wine Estate , tucked away in the mountains in an area known as Banghoek, for a taste of their wonderful range of wines. This afternoon you will enjoy the wines from the winemakers who concentrate on eco-friendly viticultural practices and use natural winemaking materials and techniques.

Tonight, we will celebrate our last day in Winelands and enjoy a wonderful wine-paired dinner at The Fat Butcher Restaurant who’s menu offers up skaapstertjies (lamb tail), oven roasted sweet potato soup, signatures steaks, Domer lamb, west coast white wine mussels, fresh salmon, limoncello calamari, non-meat risotto and plenty more. 

South Africa Safari

We take a morning two-hour flight to Nelspruit International Airport and transfer to your luxurious lodge near Kruger National Park . The Park is a wildlife legend on the African Continent. Approximately half the size of Switzerland, Denmark or The Netherlands it is one of the world’s biggest wildlife sanctuaries.

Unpack, freshen up and get ready to discover a unique wildlife world while enjoying a wonderful sunset in the wilderness. This afternoon, after getting settled into our luxury lodge, we’ll take our first driving safari in our comfortable Land Rovers.

Our spotters and trackers will work hard to make sure we see as many of the reserve’s 48 mammal species, 112 tree species, 230 bird species, and 54 reptile species as possible. The drives are phenomenal, and we see an incredible array of animals at what seems an amazingly close (but safe) distance.

As the sun sets over the bush, we’ll stop for “sundowners” (cocktails). For dinner, we have the first of the gourmet meals cooked by the lodge’s staff.

These drives allow you an opportunity to witness some of the smaller species, like the dung beetle or geckos, and larger animals, such as giraffes, at close range. We return to camp a few hours later and enjoy breakfast and perhaps a quick nap.

In the middle of the day you will have time to relax in the lodge, where you can read a book, catch up on your journaling or vacation photo posting, sip a glass of wine, or chat with your friends. Hanging out at a luxury lodge in the middle of the bush is part of the experience and one of the most peaceful aspects of your vacation. There is something about being in the middle of the African bush that makes your cell phone and email seem 
 unimportant.

We repeat yesterday’s late afternoon safari drive, which is different each time, thanks to the animals. If we are lucky, we can catch a lion roaring (absolutely amazing), a thrilling chase, or perhaps a mother leopard with her small cubs. Sundowners and dinner cap the day.

You will be amazed at the incredible experience that awaits you. This is the land of big cats – leopards and lions, with superb opportunities to capture panoramic pictures of herds of elephants and buffalo, giraffes and zebras, wildebeests, and grazing kudus. The pristine wildlife oasis will astonish you. Be ready to capture unique pictures to share with friends and family. Today is all about celebrating our magical week in South Africa while enjoying the comforts of your lodge.

The last day of your once-in-a-lifetime vacation in South Africa has arrived. It’s time to pack luggage and prepare to fly back home. After check-out at our luxury lodge, we will shuttle to Nelspruit airport and fly to Johannesburg to catch a flight home.

Upon arrival in Johannesburg, there will be an opportunity for last-minute shopping for exotic souvenirs and African goods, colorful postcards, and picturesque travel books. All too soon, you will hear the boarding call for our intercontinental flight. It’s time to say Farewell to marvelous and unique Africa. We wish you a pleasant flight!

Nights 3 – 6:  Oude Werf  – This elegant boutique hotel is the oldest running hotel in South Africa, spanning over three centuries! Located in the heart of Stellenbosch and within walking distance of many shops, cafes, and wine bars.

Nights 7 – 8:  Kapama River Lodge – The largest of the Kapama Private Game Reserve camps, River Lodge’s wide, open spaces and airy design constantly remind you that you’re sleeping under the African sky. Besides the luxury five-star accommodation, River Lodge allows you to escape to a place away from time, and indulge in one of the finest safari lodges near the Kruger National Park, South Africa.

Arrival & Departure

We begin in Cape Town and meet on the first day at our hotel in the afternoon. Our trip ends in Johannesburg at the airport in the early afternoon on the last day of the trip. You can choose to either fly home (or to other parts of Africa) this evening or spend additional time in this city. You will need to book your airfare INTO Cape Town and OUT OF Johannesburg.

  • Koeksister : one of South Africa’s favorite sweet treats, a koeksister (derived from the Dutch word “koek” which means cake or biscuit) is similar to a doughnut and can be served either as a ball of dough rolled in coconut or as plaited dough fried in oil and then dipped in sugar syrup.  
  • Bunny chow : no bunnies were harmed in the making of this fast food meal! Bunny Chow, which originates from Durban, is essentially a hollowed-out loaf of bread filled with flavorful, fiery curry.  
  • Gatsby : Another grab-on-the-go favorite, this loaded sandwich is available pretty much everywhere in Cape Town. 
  • Braai : similar to a barbeque, a braai (meat cooked on an open fire) is a way of life for South Africans. There’s even a National Braai Day celebrated alongside Heritage Day every September. 
  • Biltong  &  DroĂ«wors :   this popular snack is similar to jerky in America – dried meat that has been salted and left to dry. Similarly, droĂ«wors (directly translated to dry sausage) is spiced meat that is stuffed as a sausage and then left to dry.

Asian fusion fare (with a focus on Korean , Mexican and American flavors) is Kimcheese’s specialty, and with several nods of approval from St. Louis Magazine, including being named one of 2014’s Best Very Casual Restaurants, guests are guaranteed a great, but affordable, meal. The food we eat is so much more than simple sustenance. Instead, time spent around the dining table or picnicking in the bush is an opportunity to lean into connection, community and identity with those around you. Below, we explore the types of traditional African food one can taste on safari in addition to incredible fine dining experiences, unique ingredients, exceptional wines, organic foraging and more.

The Essence of Traditional African Cuisine

Every country in the world has a distinct food culture and naturally, African nations are no different, with each dining experience a vibrant expression of history, heritage, tradition and taste. Depending on where you dine, whether it’s a buzzy restaurant in Cape Town, a fine dining destination nestled in the Winelands or a secluded tented camp in the bush, the culinary journey is entirely different, with ingredients, cooking methods and spices influenced by centuries of indigenous culture, human migration and historical trade routes. Regardless of where your travels take you, a few things about traditional African cuisine: Firstly food is of exceptional global standards and any dietary need can be accommodated. Many of the staple foods are made with indigenous ingredients and grown on small local farms with no preservatives or additives. The dishes you’ll eat in South Africa, for instance, differ from the countries of East Africa. Cape Town in South Africa was a hub of the historic spice trade, so spices are abundantly used across the many ethnic cuisines. In fact, one of the dishes of South Africa is bobotie, a warming, hearty meal of minced meat simmered with spices like curry powder, herbs and dried fruit, then topped with a mixture of egg and milk and baked until just set.    The typical East African cuisine found throughout Kenya and Tanzania is predominantly made up of starches like maize, rice and beans. World-class chefs are opening spectacular restaurants where diners can enjoy unusual, elevated menus inspired by the prized, African-grown bounty the continent is so fortunate to have.    Tswalu in the Kalahari is a wilderness haven home to Klein JAN , an innovative fine dining restaurant run by Michelin-star chef Jan Hendrik van der Westhuizen. Working with Tswalu’s executive chef, Marnus Scholly, Jan spent two years researching the flavors, foods and culture of the Northern Cape and the menu is an inspiring tribute to the area, showcasing the diversity of ingredients native to the Kalahari while highlighting their cultural value.     Klein JAN is an incredible, immersive experience that moves guests through a series of locations before settling into a gorgeous, contemporary dining room overlooking Tswalu’s uniquely wild and beautiful desert landscape.  Chef Liam Tomlin, originally from Sydney, has called South Africa home for just over 20 years. He is renowned for consulting on various top-tier projects within the hospitality industry and his fine-dining, globally-influenced tapas are an ode to the different flavors of Africa. Chef Peter Tempelhoff is yet another South African chef who has put the country on the culinary map. Tempelhoff’s new urban restaurant FYN, he says, is for people who don’t have a lot of time but want to try myriad flavors. The restaurant offers a completely different kind of fine dining experience, leaning into South African-Japanese fusion dishes packed with flavor, but the experience is one without the typical length of a tasting menu. Of course, we would be remiss to end this list without mentioning the culinary ventures of chef Luke Dale Roberts. . . Dale Roberts is well-known for his many creative endeavors across South Africa including The Pot Luck Club and The Test Kitchen Fledgelings in Cape Town and Johannesburg’s The Shortmarket Club which all won Eat Out stars in 2022. We were thrilled to see SALON, an evolution of Dale Roberts’s world-renowned Test Kitchen open in Spring 2023 in Cape Town’s Old Biscuit Mill in Woodstock. A dining experience at one – or more – of these incredible restaurants is a must on a visit to South Africa.   It’s a pleasure to see the fine dining scene in so many African cities, from Nairobi and Lusaka to Cape Town expand and grow as new chefs open diverse restaurants that hone the flavors, skills and culinary techniques so unique to our glorious continent.
