The Bath Distillery

The Bath Distillery moved from our original home underneath The Bath Distillery Gin Bar in 2018 to a much larger site just down the road on Monmouth Place. With this new space came the ability to upscale all of our production whilst maintaining our vision of making beautifully hand-crafted, premium, small batch spirits. Botanicals, copper stills, bottling, capping and labelling machines fill the space with activity. Numerous concoctions are conceived and developed by our distillers, including varied infusions of Bath Gin Distillery Classic such as Cucumber & Jasmine and also weekly specials to be enjoyed at the Bath Distillery Gin Bar. Our latest offering, Bath Gin Orange Sloe, has recently been bottled and released from Bath’s first distillery for 250 years.

Distillery Tour & Tasting Experience

Immerse yourself in the heart of The Bath Distillery with our Distillery Tour Experience. Once greeted at The Bath Distillery Gin Bar with a Bath Gin & tonic, you will begin to learn about the history of gin and how we became the first distillery within Bath in over 250 years.

Your journey will then continue to our distillery, located just a 5 minute walking distance from the bar. Here you will be introduced to 'Jane', our charming copper pot still, whilst we guide you through our distillation and bottling processes.

Returning to the cosy setting of the bar, you will then get to sample our delicious collection of Bath Gin before departing with a souvenir miniature from our shop.

Tours take place on Saturday's at 12pm or 2pm and require a minimum of 2 participants and the maximum being 12 (tours may include mixed groups).

Costing £35 per person and last approximately 90 minutes.

Gin Cocktail Masterclass Experience

In our Gin Cocktail Masterclass Experience you will be expertly guided by one of our team in perfecting the art of a great gin cocktail. Hosted at our Bath Distillery Gin Bar, you will have the chance to get behind the bar and release your inner bartender.

With three flavourful gin cocktails to learn, this experience is fun-filled and hands-on: perfect group events for people who love gin!

Using our collection of Bath Gin’s, created by our Bath Distillery, you will learn a range of bar techniques, including how to mix and balance flavours.

The Masterclass requires a minimum of 2 participants and the maximum being 12 (masterclass may include mixed groups).

They take place on Saturdays at 12pm or 2pm. Costing £35 per person and lasting approximately 90 minutes.

Large corperate/group bookings can potentially take place midweek.

Description.

Visit the distillery and discover the history of Downton Distillery, the heritage of the surrounding area and how this has influenced our award-winning premium spirits. The distillery is located on the Domaine Hugo Vineyard which overlooks the Wiltshire Downs and Avon Valley.

The tours are designed to inform, entertain, and may require your active participation. Tours will take groups of 10 – 12 people only, which ensures everyone enjoys their time and gets the best experience possible.

The events are run by Hugh Anderson, the founder and head distiller of Downton Distillery.

  • Learn about the history of Downton and what makes us unique.
  • Learn how we make Explorer’s Gin and the botanicals that we use.
  • Sample Explorer’s Gin and then enjoy it in a classic Gin and Tonic.
  • Tour the vineyard and see where we are re-wilding Juniper.
  • Participate in a bottle run signing bottles.
  • Enjoy 2 delicious cocktails using Explorer’s Gin.

Duration: 4hrs

Please note:

  • Bring valid ID with you as we operate a challenge 25 policy.
  • Copy of your receipt for the tour (proof on the phone is fine)
  • You will be required to walk around the grounds, so sensible footwear should be worn.
  • As the distillery has no heating, please bring warm clothing during the winter months.

Having done various tours it was a joy to be given a hands on experience with Hugh at Downton Distillery. It was well paced, no topic was off topic, his passion showed through the various samples and distillates he took us through. He even walked us through how one of James May’s recipes was created, with various cocktails then made at the end, it felt like I was having fun around a friends kitchen table! More then four hours passed and I can not thank Downton enough for their time and fun.

We really enjoyed our long tour, where Huw gave us a fascinating insight into the development of a new gin, through the distillation process, and then to bottling! It was also lovely to see the botanicals in his herb garden. Participating in the bottling, including personally signing bottles, was really fun. The final cocktails and chance to chat with Huw made an excellent end to the tour! Very highly recommended!!

The Wiltshire Distilling Company

Set in the heart of South West Wiltshire, the beautiful nine-thousand-acre Fonthill Estate provides us with the perfect setting and surroundings to make the finest English whiskies. Our distillery will be in a Grade 2 listed barn. Alongside, a magnificent stone grain drying barn will be our visitor centre and shop. All located in the home village of Fonthill Bishop.

We will use the very best ingredients from the crops growing on the prime chalk downlands that surround us, mixed with Fonthill’s pure water, naturally filtered through limestone rock on its journey to our bottles. Producing single malt, single grain and blended whiskies that are single estate as well.

Witchmark is the brand name we have chosen to represent the range of whiskies and white spirits that we will be making at our distillery. The name comes from the medieval witch marks carved into the stone walls and oak beams in the buildings we call home, designed to ward off evil spirits and protect those working and living inside.

Stone daisy is our beer brand. witch marks are often referred to as hexafoils or daisy wheels and with our 'daisy wheels' carved in stone, stone daisy was an obvious name for the brewery that not only produces the beer wash that is distilled to make our whisky new make spirit but also our range of cask, keg, canned and bottled beers., our mission.

To underpin the provenance and quality of our spirits using the beer wash produced in our craft brewery brand Stone Daisy.

All with our commitment to sustainability, drawing on the backdrop of the Fonthill Estate and Wiltshire to create a long-lasting credible story.

Gin + Botanical Spirits

We will also produce a range of gins and botanical spirits inspired by our beautiful surroundings.

Our single-estate gins will be made from neutral grain spirit produced in our own stills at above 96% ABV. We will produce a selection of gins from a number of recipes.

Making our own neutral grain spirit means we are also producing our own vodka - made in Wiltshire! We will be working closely with UK charity Plantlife (plantlife.org.uk) to establish, grow and maintain stocks of juniper, the base botanical for gin, on the chalk downlands of the Fonthill Estate.

Our botanical spirits will be made from the new make spirit that would have become whisky had it been left to mature in a cask for at least three years.

This new make spirit will be re-distilled with a range of botanicals and aged in oak casks for a few months to produce a spirit drink helping to drive the establishment of a new category.

The Great Bustard, prominent on the Wiltshire flag, will be a feature of our brand identity reinforcing our commitment to sustainable practices. These birds are a missing piece of UK wildlife heritage, artificially removed from the ecosystem due to over zealous trophy hunters. They were extinct in the UK from 1832 but have been re-introduced to nearby Salisbury Plain in Wiltshire where a breeding programme is now underway. Amazingly, the Great Bustard was found on the Fonthill Estate for the first time soon after the idea for a whisky distillery was conceived.

Award-winning gin and vodka.

We grow, harvest and mill our wheat before distilling and bottling our spirits – all on the Ramsbury estate. each part of the process is carefully conducted to create award-winning gin and vodka, from field to glass each bottle can be traced back to the very field in which it began its journey.

Built in 2015, our distillery is kitted out with state-of-the-art equipment, including a 43 plate copper still, and 2 pot stills for gin production. we first began distilling our own vodka from our wheat – traditionally a bakers wheat- which though lower in yield, produces a far more distinct, and smooth flavoured spirit before adding gin to our portfolio. thanks to our careful process, high quality ingredients and expertise, we produce some of the finest spirits in Wiltshire.

From Field To Glass

Our process.

We begin the process by planting our wheat – a bakers wheat traditionally – cultivated on the rich chalk soils of Ramsbury’s estate. Once harvested, milled and fermented, the wheat becomes ‘low wine’, and is diluted and distilled through a 43-plate copper column still.

It’s part of a close loop production cycle that used the land to its fullest potential, with little wastage.

A biomass boiler powered by our estate’s sustainable woodland heats the still, the spent grains feed the estate’s cattle, and in turn, their manure is returned to the fields. Even Ramsbury’s wastewater is funnelled back to the land after being safely purified through a series of wildlife friendly reed filtration beds.

Smooth and characterful spirit

The ingredients.

The base of our spirits is simple. Two ingredients combine to make a smooth and characterful spirit – Our wheat and chalk filtered water.

These are the only two ingredients that give our vodka it’s distinct and unique flavour. To create our gin, we take this spirit and add out 9 botanicals, including our signature quince which is grown in our orchard just footsteps away from the distillery.

People that taste our spirits assume that we’re master distillers. That distilling is our life’s calling. That we’ve abandoned all other pursuits.

But we’re also farmers, bird-watchers, professors (of a gin school), brewers and guardians of land. We make our sustainable gin and vodka on a single estate in the heart of the rolling North Wessex Downs, where we strive to be as environmentally friendly as possible. Come visit us, if you like. Scout & Sage Micro Distillery

LONDON DRY GIN

Our London Dry has notes of Seville Orange, pink peppercorn, cardamom and a subtle sweetness of cassia bark with hints of floral lavender from the compounds of the cubeb berries. We distill using a high load of juniper so it has a lovely piney finish.

We love to mix it up a few different ways ~ Orange & a sprig of thyme ~ Grapefruit & a sprig of rosemary ~ Simply served with a big squeeze of lime.

Cocktails ~ Scout & Sage London Dry Gin also makes a mean Martini and one heck of a Negroni.

RASPBERRY & HIBISCUS GIN

Folks love a pink gin and we aim to please. We wanted ours to be on the sweet side as expected in a pink gin, but to still have an underlying “ginny-ness” to it.  The raspberries bring a soft fruitiness, the hibiscus flower a sweet & sour floral aspect. It’s pretty darn dreamy when garnished with a sprig of fresh mint and a twist of orange peel.

Limited Edition

MOTHER’S RUIN GIN

LIMITED EDITION – Every year just in time for Mother’s Day we distill our Mother’s Ruin Gin. It filled with citrusy grapefruit, lemon & pomelo peels, spicy grains of paradise peppercorns and then a softer note of locally gathered rosemary flower and wild gorse flower is added. In total there are 15 botanicals that go into the pot.

Try garnishing with a sprig of rosemary and a twist of grapefruit peel.

Did you know that Conker is Dorset’s first gin distillery, founded in 2014? They use craftsmanship and the best possible ethical ingredients to distill the excitement and integrity of small batch spirits into the glass - and they did that very thing when creating our spectacular September 2017 Gin of the Month . 

For just £25, you and a gin pal can join Conker’s Founder and Head Conkerer, Rupert, on a tour of their Victorian warehouse distillery in Bournemouth. 

You'll learn how they create their award-winning spirits; from the selection and distillation of botanicals, to the intricate field-to-glass journey of the ethically sourced speciality coffees of their famous Conker Coffee Liqueur. 

Of course, you’ll also  be able to enjoy a guided tasting of the entire Conker range too!

The Witchmark Distillery

Set in the heart of southwest Wiltshire in the historic village of Fonthill Bishop, the beautiful 9000 acre Fonthill Estate provides us with the ideal surroundings to make the finest English whiskies. The distillery building is a Grade 2 listed barn dating back to the 1600’s. Beside it, a magnificent grain drying barn houses our visitor centre and shop. In making our spirits we will use the very best ingredients from the crops growing on the prime chalk downlands that surround us, mixed with Fonthill’s pure water, naturally filtered through limestone rock on its journey to our bottles.

Rooted in Wiltshire

Our distillery is named after the medieval 'witch marks' carved into Fonthill's old stone buildings. Witch marks are believed to have turned away evil spirits, providing protection to the building and those who lived or worked within it. Lucky for us we’re only making good spirits! One of the most common types of witch marks found within the properties in our area is the daisy wheel, also known as the hexafoil. As the name suggests, the symbol takes the form of a six petalled flower carved using a hand compass resulting in its geometrical design.

Our Terroir

The core ingredients used to produce our spirits are found on our doorstep here at Fonthill — the barley in the surrounding fields and the water from right under our feet. Traditional methods of malting our barley, almost exclusively by hand, are used at Britain’s oldest working malt house, established in 1855, located nearby at Warminster. This provenance, underpinning our production processes, provides the perfect backdrop to our authenticity.

From the Plain to Extraordinary

Ten Hides Distillery is a new, early stage, venture based in Wiltshire, alongside Salisbury Plain. Benefitting from local raw ingredients, including chalk-filtered water from the plain and premium barley, we are setting out to launch a distillery, and a brand, perfectly poised to make a unique and powerful contribution to the world of spirits, both in Wiltshire and beyond. Primarily looking to produce whisky but also developing rum and gin. The name was inspired by a local village in rural Wiltshire, called Tinhead. A name, said to derive from the original ‘Ten Hides’, denoting an ancient measurement of land. A ‘hide’ once referred to a certain number of acres, but later also demonstrated how much produce was being gathered on a particular plot. With this in mind, ‘Ten Hides’ has a wonderful dual meaning – both highlighting the provenance of our Wiltshire distillery, and emphasising the all-important premium local produce that goes into every bottle.

The Wiltshire Distilling Company

Set in the heart of South West Wiltshire, the beautiful nine-thousand-acre Fonthill Estate provides us with the perfect setting and surroundings to make the finest English whiskies. Our distillery will be in a Grade 2 listed barn. Alongside, a magnificent stone grain drying barn will be our visitor centre and shop. All located in the home village of Fonthill Bishop.

We will use the very best ingredients from the crops growing on the prime chalk downlands that surround us, mixed with Fonthill’s pure water, naturally filtered through limestone rock on its journey to our bottles. Producing single malt, single grain and blended whiskies that are single estate as well.

Witchmark is the brand name we have chosen to represent the range of whiskies and white spirits that we will be making at our distillery. The name comes from the medieval witch marks carved into the stone walls and oak beams in the buildings we call home, designed to ward off evil spirits and protect those working and living inside.

Stone daisy is our beer brand. witch marks are often referred to as hexafoils or daisy wheels and with our 'daisy wheels' carved in stone, stone daisy was an obvious name for the brewery that not only produces the beer wash that is distilled to make our whisky new make spirit but also our range of cask, keg, canned and bottled beers., our mission.

To underpin the provenance and quality of our spirits using the beer wash produced in our craft brewery brand Stone Daisy.

All with our commitment to sustainability, drawing on the backdrop of the Fonthill Estate and Wiltshire to create a long-lasting credible story.

Gin + Botanical Spirits

We will also produce a range of gins and botanical spirits inspired by our beautiful surroundings.

Our single-estate gins will be made from neutral grain spirit produced in our own stills at above 96% ABV. We will produce a selection of gins from a number of recipes.

Making our own neutral grain spirit means we are also producing our own vodka - made in Wiltshire! We will be working closely with UK charity Plantlife (plantlife.org.uk) to establish, grow and maintain stocks of juniper, the base botanical for gin, on the chalk downlands of the Fonthill Estate.

Our botanical spirits will be made from the new make spirit that would have become whisky had it been left to mature in a cask for at least three years.

This new make spirit will be re-distilled with a range of botanicals and aged in oak casks for a few months to produce a spirit drink helping to drive the establishment of a new category.

Great Bustard

The Great Bustard, prominent on the Wiltshire flag, will be a feature of our brand identity reinforcing our commitment to sustainable practices. These birds are a missing piece of UK wildlife heritage, artificially removed from the ecosystem due to over zealous trophy hunters. They were extinct in the UK from 1832 but have been re-introduced to nearby Salisbury Plain in Wiltshire where a breeding programme is now underway. Amazingly, the Great Bustard was found on the Fonthill Estate for the first time soon after the idea for a whisky distillery was conceived.

Distillery near salisbury celebrating after winning three awards.

A distillery near Salisbury has won three awards for their gin that supports endangered birds on Salisbury Plain.

Downton Distillery partnered with the Great Bustard Group to create 'Great Bustard Gin,' earlier this year. With each bottle sold, Downton Distillery gives 25 per cent of the money back to the charity for new habitat – around £10.

The gin won gold earlier this year at the 'Taste of the West Awards', but also won 'Best Contemporary Gin' at the recent 2024 Gin Guide Awards - the largest independent spirits competition in the world.

With hundreds of entries from over 35 countries, this achievement is one that requires consistently high scores from the judges across key characteristics of the spirit.

It then won another gold as the best gin to use within a 'Martini' at the same competition.

More recently, the gin has won another award at the International Wine and Spirit Competition (IWSC) where just 50 golds were handed out in a field of over 1,000 gin entries.

Head distiller Hugh Anderson worked with founder David Waters to create this new gin using botanicals that these critically endangered birds forage for on Salisbury Plain.

It is a London dry gin with a citrus herbaceous profile using wild rocket, yarrow, red clover and lucerne also known as alfalfa.

Hugh said: “When creating a new product it is always a daunting process, more so when you are using botanicals that others have not used. One's greatest fear is how it will be received.

“It has been thrilling to watch the positive feedback on people’s faces when they hear that four of the chosen botanicals are part of the Great Bustards diet. It is a wonderful way to educate people about these birds whilst increasing public awareness of their plight.

“I will be doing an evening at the Live Escape rooms on June 14 where I will be talking about them and making some cocktails with the gin!”

You can buy bottles online through Downton Distillery, or at Regent Tailoring and Downton Brewery. The distillery has also launched a refill pack service, so you don’t need to re-buy glass bottles. Tours are available to the distillery where Hugh will teach you about the botanicals used within this gin.

A black bear who had ventured into a Salt Lake City neighborhood from the nearby mountains took a 15-foot tumble from a tree Wednesday morning after it was tranquilized by wildlife officials, who were unable to provide it a soft landing.The 2-year-old male black bear perched above the tree-lined streets at the base of Utah's Capitol Hill took a hard fall onto the road below but survived. The state's Division of Wildlife Resources released the bear later Wednesday into a more ideal habitat in the mountains after the agency said it passed multiple health evaluations.The young bear's urban adventure was cut short after wildlife officials shot it with tranquilizer darts, causing it to slip and fall on its climb down the tree, spokesperson Scott Root said. They had been working to set up a bucket truck beneath the tree to break its fall but could not secure it in time.Crews loaded the bear into a tube-like cage, administered a fast-acting drug to reverse the effects of the tranquilizers and tagged its ear to track its location.Residents had gathered just a few blocks north of downtown to watch officials capture the animal, and many winced as it hit the ground. Bears are resilient creatures and have recovered from falls in the few past instances where local officials were unable to catch them, Root said.Black bears — the only bear species found in Utah — typically come out of hibernation in mid-March, but they are rarely spotted in the capital city despite its close proximity to the mountains, he said.The bear, Root said, could have been searching for food and water away from the dry foothills or was pushed out of its territory by a larger male bear.

STORY: :: by.stvnOff the coast of the east Malaysian island of Redang, these two sea turtles have paired off, and will soon mate. :: Nicholas TolenBut conservationists fear that due to climate change, scenes like this could become a rare sight, jeopardizing the ability of these animals to reproduce. :: SeatruA balanced male to female ratio among turtle hatchlings is heavily influenced by temperatures during incubation.With temperatures on the rise, scientists say they are witnessing a feminization of the turtle population. In an effort to ensure a more balanced sex ratio, scientists at the Chagar Hutang Turtle Sanctuary here are quite literally taking the future of the species into their own hands– by relocating new sea turtle nests to shadier, cooler areas. Under the cover of night, this female turtle is laying her eggs. After she scuttles back to the ocean, a group of volunteers carefully dig into the sand to retrieve them.Their mission– to move the newly-hatched eggs to a shadier area, closer to the rainforest. After hatching, the researchers transfer the babies to a small nursery before letting them go at night to reduce their exposure to predators. Sea turtle researcher at the University of Malaysia Terengganu, Nicholas Tolen, says the sweet spot for these nests to achieve a balanced sex ratio falls within a narrow range of only a few degrees. “Basically 28 to 30 degrees Celsius is where we’ll have a mixed sex ratio. Anywhere over 30 degrees Celsius of an average incubation temperature is going to push you into a 100% female-biased hatching production, and anywhere closer to 28 and under, you're going to have the opposite effect of a male-bias." For decades, the population of marine turtles has been in serious decline across Malaysia, often due to the harvesting of their eggs, overfishing, and lack of enforcement of conversationalist policies.:: Nicholas TolenLeatherbacks used to be a star attraction for visitors to this region until the population collapsed in the late 80s.In recent years, observers at Chagar Hutang were already seeing fewer males being hatched. And with sea and surface temperatures still on the rise, Tolen says that without initiatives like this one, the trend is at risk of continuing. “Sea turtle conservationists were concerned that uncontrolled global warming in the future, in the next 15, 20, 30 years, will be detrimental to sea turtle nesting populations worldwide because it will feminize sea turtle hatchling populations, which will then lead to less productivity, less female turtles being able to mate and lay more eggs.” Although the success of the current program is still being measured, the turtles still face the wider trend of rising temperatures around Malaysia.:: by.stvn Analysts said the average surface temperature of the South China Sea surrounding Redang has been climbing steadily towards 30 degrees Celsius in recent decades, and could eventually exceed the turtles' magic temperature.
