What Is Induction Cooking and How Does It Work?

Induction cooking has been around for decades, but in the last few years it’s gained popularity among chefs and home cooks alike as an alternative to the gas stoves that have reigned supreme for decades. You can chalk its popularity up to a combination of factors: government mandates to electrify newly constructed home kitchens and recent scientific studies published about emissions from gas stoves posing health risks . Induction burners , which are powered by electricity but function differently than a classic coil-style electric stove, can heat faster and more efficiently than other kinds of stoves, making them an appealing option.

What is induction cooking?

As soon as it’s turned on, an induction burner sets up an electromagnetic field between the burner and the pan it’s in contact with, creating eddy currents, or swirling electrical currents, in the metal of the pan (as long as that pan is magnetic), and the resistance of the metal to those currents in turn creates heat throughout the pan and all at once. (Gas and conventional electric burners apply heat to the surface of the pan, which then requires more time to spread to the rest of the pan.)

What are the benefits of induction cooking?

According to Ari Matusiak, founder and CEO of Rewiring America, the largest pro-electrification nonprofit in the United States, a gas stove transfers only about 40 percent of its heat energy to a piece of cookware. A traditional electric coil stove transfers about 74 percent, while induction stoves transfer closer to 90 percent of their electrical energy. The result is that cookware heats as much as three times faster than electric or gas.

Induction also offers more precision, with the ability to heat cookware to a specific temperature or make adjustments with a much faster response time. That precision is something Thomas McNaughton, co-chef of Flour + Water Hospitality Group, appreciates: “Like when we’re making ricotta, we know that the milk absolutely will not boil over because we’re able to set it to cook to an exact temperature.” McNaughton and his co-chef Ryan Pollnow like induction cooking so much that they’re in the process of moving toward all-induction cooktops in their forthcoming pizza shops.

Air quality is both an environmental and safety advantage when it comes to induction, especially as compared to gas stoves. Matusiak cited several recent studies that have shown that indoor cooking with gas has comparable health effects to secondhand smoke and increases chances of childhood asthma . Gas cooking releases a chemical called benzene which is linked to leukemia and other types of cancers. Improving indoor air quality is a major motivation in the legislation aimed at moving toward induction.

There are additional safety advantages. Induction cooktops only work when there’s a pot or pan on the unit; and even with a pan on it, the glass or ceramic top doesn’t get as hot as a gas or electric-coil burner. They’re also hard to turn on accidentally, and you don’t have to worry about any open flames.

These concerns, both environmental and for their staff, have informed McNaughton and Pollnow’s move toward induction. They’re in the process of pursuing B Corp Certification, which takes into consideration their environmental footprint. Using induction allows them to significantly reduce their restaurant’s energy usage.

Induction also stands apart in terms of cleanup. Their flat glass or ceramic surface makes them easy to wipe down, and even when something boils over or spills, it won’t scorch on the cooktop because the surface doesn’t get hot enough to burn it.

What are the drawbacks of induction cooking?

You may have heard that not all pans work with induction, and that’s because for this transfer of energy to occur, the pan must be magnetic. That means that some pans, especially aluminum and some stainless-steel pans, cannot be used on induction. The good news, though, is that cast-iron pans , carbon-steel pans, and enamel cast iron are all ideal for induction. It’s okay to use pans that are larger than the induction burner, but like a large pan set over a smaller electric or gas burner, they’ll only heat up right where they’re in contact with the burner.

For tasks like finishing pasta that require lots of movement of a pan, induction can pose a problem. While gas can offer ambient heat when a pan is lifted off the burner, induction requires full contact for the electromagnetic currents to move heat, meaning that lots of lifting and moving of the pan can interrupt the cooking process. Induction also requires electricity, which means that it will not work during power outages.

It’s kind of like devouring a delicious plate of sushi: wrapping up one amazing vacation always leaves you wanting more. But with such a big world to see – and so little time in which to see it – where should you book your next trip?

This year, it’s time to let your tastebuds do the talking. Read on to learn why foodies around the globe are flocking to these emerging travel destinations. How many of these spots have you visited?

1. Tbilisi, Georgia

GEORGIA-HEALTH-VIRUS

Cobblestoned Tbilisi, the capital of Georgia, is bursting with history – and by the time you leave, you’ll be bursting with satisfying Georgian dishes. Here, you can learn the art of eating khinkali, twisted dumplings filled with meat and broth, or enjoy crisp tomatoes and cucumbers paired with one of Georgia’s many varieties of cheese. Whatever you do, don’t forget to try khachapuri, a boat-shaped dish traditionally filled with cheese and egg, before you have to say goodbye.

2. Oaxaca, Mexico

If you want to eat well, visit Oaxaca: From street vendors to world-class restaurants, this city has so much to offer. Make sure to try at least one of Oaxaca’s seven moles, or thick chili-based sauces, which can take days to prepare. Then, try some of Oaxaca’s most unique dishes, including huitlacoche, a corn fungus similar to a mushroom, and chapulines, a crunchy snack made from deep-fried grasshoppers.

Wash everything down with tejate, a thick drink made from toasted maize and cacao. And for dessert, don’t miss paletas, frosty ice popsicles made from fresh fruit.

3. Medellín, Colombia

Visit Medellín, and you’ll understand why Colombian food is well worth booking that flight. In Medellín, your day starts with buñuelos, fried dough balls that are best enjoyed with a steaming mug of hot chocolate or coffee. Spend the day seeing the sights and devouring plenty of empanadas along the way.

At day’s end, dig into bandeja paisa, a traditional dish that includes a broad array of ingredients. Chorizo, a fried egg, plantain, chicharrón, arepa, avocado, beef, rice and beans are all served together for a hearty meal that hits the spot after a long day of traveling.

4. Ljubljana, Slovenia

Take a hiking tour through Slovenia, and you’ll be rewarded with sights of snow-capped mountains, hidden waterfalls and pristine lakes – but best of all, you’ll get to end every day with a different take on a hearty traditional stew. And if hiking isn’t really your thing, head to charming Ljubljana to sample all those dishes and more.

Obara, golaž and pohorski pisker are just a few of the savory, saucy stews waiting for you to soak them up with a crusty loaf of bread. For dessert, don’t miss potica, a sweet, festive cake that can be filled with ground walnuts, poppy seeds or even Nutella.

5. Havana, Cuba

CUBA-ECONOMY

No trip to Havana would be complete without enjoying ropa vieja, a dish of tender, shredded steak stewed in tomato sauce with peppers and onions and often served with rice and plantains. This dish is a perfect example of why Cuban food is sought out by so many.

Pair your ropa vieja with one of the many iconic Cuban cocktails out there, like the mojito – a Havana classic. Both can be enjoyed at Doña Eutemia, recently named one of the best restaurants and an “Old Havana stalwart” by CultureTrip .

6. Cape Town, South Africa

Visiting Cape Town? Don’t miss the chance to order a Gatsby, a huge sandwich stuffed with french fries, meat and vegetables. If you’ve still got room left over, seek out boerewors, a spiral-shaped mince sausage, best enjoyed with a cold glass of beer.

After all that, think you’re full? It won’t be difficult to find an appetite for dessert if you spot anyone selling koeksister on your way home. These sticky-sweet pastries made out of fried dough are completely irresistible.

7. Bologna, Italy

Bologna is the place to go to enjoy some of the most beloved examples of Italian food in their original cultural context. Try tagliatelle al ragù, and you’ll never think about spaghetti bolognese the same way again. And don’t stop there: lasagna verde, tortellini and gramigna are just three more must-try pasta dishes no visitor to Bologna can overlook. Buon appetito!

8. Tel Aviv, Israel

Before you head out to explore Tel Aviv, start your day with shakshuka, a dish of poached eggs in a spicy tomato and pepper stew with parsley and feta cheese sprinkled on top. As the day heats up, cool down with a sweet treat from Anita Gelato – if you’re lucky enough to stop by when their halva flavor is available, you might just be taking a pint back to your hotel room.

Towards sunset, head to Jaffa for dinner at The Old Man and the Sea, a legendary seafood restaurant overlooking the Mediterranean. You’ll get to enjoy a spread of almost two dozen different little salads included with dinner: the perfect way to sample hummus, tahini, pickled vegetables and other classic Middle Eastern dishes.

9. Osaka, Japan

JAPAN-ECONOMY

If you’re craving street food, head to Osaka to see why this city is more than worthy of the nickname The Nation’s Kitchen. There, you can eat your way through the Dotonbori, Shinsekai and Kitashinchi districts, sampling favorites like takoyaki – fried dough balls with octopus – and kushikatsu, or deep-fried meat and veggie skewers. Be warned: you will be thinking about these tasty fried treats for years to come.

10. Porto, Portugal

Whether you’re looking for a satisfying lunch to carry you through an intense afternoon of port tasting, in desperate need of a hangover cure or just curious to discover what might be the world’s most indulgent sandwich, francesinha won’t let you down.

This sandwich, originally from Porto, typically includes multiple different types of meat – sausage, linguiça, steak and ham – drenched in a spicy seafood sauce and melted cheese. Just for good measure, it’s also topped with a fried egg and served with fries.

But while your dog might act like what it wants most in the world is leftovers from your dinner table, dogs have different nutritional needs than people do — and every dog is unique. To find the best dog food, you'll want to target your dog's age, size and individual needs. (For instance, you might want to look for the small-breed or senior version of one of the top dog foods on our list.) That's why, beyond our top picks, it's important to start by asking your veterinarian for suggestions, too.

Our pros regularly test and review different canine products, including indestructible dog toys and dog strollers , and we're familiar with the top brands on the market. We've tested dog foods in our homes and with our panel of consumer testers. When doing our research we surveyed dog parents and veterinarians (including Dr. Caos and Megan Conrad , M.B.B.S., an associate veterinarian at Wellhaven Pet Health in Oregon and a dog owner) and considered ingredients, price, varieties and availability for each option. All in all, we looked at more than 25 different dog foods before making our list of favorites .

A blended recipe of chicken, lamb and salmon goes into this multi-protein dry dog food. One of our pet pro's dogs has been eating this food brand since puppyhood and still loves it.

Like other dry dog food, "the crunch texture can help promote dental health," says Dr. Caos . "The mechanical action of chewing kibble can help reduce tartar buildup and maintain healthier teeth and gums while the abrasive action of chewing can help scrape away plaque." Aside from maintaining those pearly whites, this kibble is complete with what the brand maintains are "superfoods" including grains, seeds, fruits and vegetables along with the protein (each cup has at least 22% crude protein). It's pricier than most traditional supermarket brands but a little less costly than other premium brands, and it has many reviewers singing its praises.

We're showing Nutro's dry food for large breeds, but the brand also offers Ultra versions for small dogs , weight management , puppies and senior dogs as well as wet food and a limited-ingredient option for dogs with sensitive stomachs. We like that you can find Nutro online including on Amazon, in pet stores including PetSmart and in mass retailers like Walmart.

There are more affordable classic dry dog foods on the shelves, but for premium ingredients at a reasonable price we like Blue Buffalo. Deboned chicken is the first ingredient, followed by chicken meal, brown rice, and a mix that includes barley, oatmeal and many fruits and vegetables. The brand includes vitamins, minerals and antioxidants to help boost a dog's immunity. On Amazon it gets more than 30,000 five-star reviews, with many reviewers calling it their dog's favorite.

Blue Buffalo is available many places including online, in pet stores, at supermarkets and in mass-retail chains. This link is to the adult chicken formula; there's also Baby Blue puppy food.

Fresh dog food must be refrigerated or frozen when it arrives through the mail, and it's more expensive than traditional kibble. Unfortunately you can't get a grasp on the exact monthly cost until you give it a try, since it varies depending on your dog's size and needs.

The brand says that plans start at less than $4 a day for small dogs, and average $8 a day between all breeds. Try now to get a plan customized for your pup! The Farmer's Dog is particularly good for pets with sensitivities or allergies . The extremely detailed sign-up quiz helps you zero in on everything you need to consider to find the best formula for your dog, from their body condition (skinny, just right, rounded or chunky) to their activity level, pickiness, current food, health issues (including allergies and sensitivities) and whether or not they require a prescription diet.

Once you've filled out all of that information, The Farmer's Dog will provide you with a recommended plan including up to three flavors of freshly prepared dog food that they then flash-freeze. (We named them the best frozen dog food delivery service .) Protein can include chicken, beef, turkey or pork. Interestingly, they'll also sell you just the raw ingredients and teach you recipes if you want to try to DIY your dog's food at home.

Either way, their subscription is likely to be more expensive than store-bought food, and less convenient since you'll have to be home to receive your delivery and get it into the fridge or freezer. The brand says that plans start at $2 a day. To illustrate how costs can range, the web site gives an example of a 11-pound Yorkshire terrier whose fresh food plan is $2.80 a day and a 75-pound Labrador retriever mix whose fresh food plan is $10.39 a day. Fans say it's worth it if their dog thrives on it.

Dr. Conrad highly recommends this brand since she finds it to be one of the "most nutritionally balanced" options on the market. Omega-6 fatty acids help keep a dog's skin and coat healthy and shiny, while EPA and DHA (found in the salmon and fish oil) help promote heart health. It also features natural prebiotic fiber to help improve digestive health by cultivating helpful intestinal bacteria, so it's good for a dog with a sensitive stomach.

When reading the ingredient list, you'll see this option mainly relies on fish proteins, with a variety of vitamins and minerals like vitamin-E and vitamin-A supplements as well as choline chloride to keep pup's liver healthy. It is also poultry-free, which can be a taste preference for some picky pups.

There are many other Pro Plan varieties for dogs of different sizes and with different issues. Just a few include a high-protein mix with beef, a weight management formula for large dogs and a puppy formula . Purina is a well-known mass-market brand available online, in pet stores, in grocery stores and in large retail chains. If you need to pay less, you can also check out the Purina One line.

Though most dogs don't need a grain-free diet, your vet might recommend one if your dog has shown sensitivities or allergies to grains .

"Every dog is unique, and their nutritional needs may vary," Dr. Caos explains. "While some dogs thrive on grain-free formulas, others may do well on diets containing grains." This beef-and-sweet potato recipe is packed with 32 percent protein and is formulated for all breeds. It also includes omega-6 and omega-3 fatty acids to promote healthy skin and shiny fur, and glucosamine and chondroitin that help keep joints and hips healthy. Deboned beef is the first ingredient, followed by lamb meal, salmon meal and then sweet potatoes.

There are relatively limited number of grain-free varieties in the Merrick line but they do sell grain-free dog food for puppies . Also popular: The Merrick grain-free wet dog foods, such as a canned steak dinner . The brand is widely available online, in pet-food stores and at some mass retailers.

Wellness Canned Dog Food

There are a few reasons you might want to opt for wet dog food like this one by Wellness, according to Dr. Caos. For dogs with existing dental issues that may have trouble chewing hard food, and for dogs that don't seem to drink enough water throughout the day, the high moisture content makes this type of food easier to chow down on and helps keep dogs hydrated . Dr. Caos also notes that wet dog food can be more appealing to pets due to its "softer texture, stronger smell and richer flavors."

Canned food tends to be a bit more expensive than dry kibble, but it's a less expensive option than fresh. Cans are heavy and you'll need to store unused portions of an open can in the fridge. But unlike with fresh dog food, canned food is shelf-stable and can last a good long while unopened. The main protein source in this one is lamb and beef, but it also features a variety of added vitamins and supplements to help promote your pet's healthy immune system, digestion and strong bones.

Other flavors include turkey and even a venison and salmon mix, and you can buy Wellness dog food in many stores, including PetSmart and Walmart, and on many web sites, including Amazon and Chewy.

Hill's Science Diet Dry Dog Food

Hill's Science Diet is another one of the dog food brands that Dr. Conrad specifically recommends due to its "nutritionally balanced" formula that's great for many different types of dogs.

This version for small and mini breeds is especially popular with pet owners, with more than 22,000 five-star reviews on Amazon. It's got extra-small kibble made for tiny jaws and is formulated with omega-6 and vitamin E for a shiny coat and healthy skin. Chicken meal is the first ingredient and its main source of protein, but there's also rice, whole grain wheat, soybean, barley and corn in the mix.

This one is meant for adult dogs ages 1 to 6. If your small dog tends to get chunky there's also a weight management formula, one for small dogs with a sensitive stomach and there's a senior formula for small dogs ages 11 and older. There's a different adult formula for dogs who fall into the middle ages of 7 to 10 — the brand's age labeling is a bit confusing. Hill's Science Diet is sold primarily at pet stores, veterinarian offices and online.

Royal Canin Dry Dog Food

Hyper-specific formulas are a hallmark of the Royal Canin brand, which offers dozens of blends so you can find the one that best matches your dog's size and age . This variety, for large adult dogs 56 to 100 pounds, is made of bigger kibble pieces for their strong jaws. It's a chicken formula (like almost all Royal Canin dog food) that's also packed with antioxidants, vitamins and omega fatty acids for your big dog's shiny coat, bone health and joint support.

What if your dog is extra large? There's also a formula for giant breeds who weigh over 100 pounds. Royal Canin also tailors meals for specific breeds like its Golden Retriever , Labrador Retriever and Rottweiler formulas. The shape of the kibble changes for each one! Finally, if your future biggie is small right now small, the brand has large breed puppy food. This brand is pricey and though it's sold at pet stores, veterinarian offices and online, it's not usually in grocery stores or mass-retail chains.

Stella & Chewy's Meal Mixers

Raw dog food seems to be all the rage, with marketing that seems to say the closer dog food is to a fresh kill, the more appropriate it is for your dog. The American Veterinary Medical Foundation (AVMF) cautions against handling and serving actual raw protein to your pup, because it can give you or your pet a foodborne illness.

We think a freeze-dried raw dog food, like these Meal Mixers from Stella & Chewy's, is a smart way to go if you want to try the trend without the danger of preparing raw meat yourself. (Plus, it's shelf-stable!) They are single-sourced high-protein pieces, 40 percent crude protein, and the brand suggests you mix it with your dog's regular kibble. That way your pet gets the added taste and a blast of protein.

"My dog loves everything Stella & Chewy," reports one of our Lab leads. Because each bag is essentially about 95 percent meat, they are expensive. This 35-ounce pouch is about the same price as many 30-pound bags of dry dog food. So it really is just meant as a topper, as the brand says, to "kickstart your kibble." A slightly less-expensive alternative is the brand's dinner dust that you shake onto dry dog food like a seasoning. Stella & Chewy's is sold in pet stores and online.

How we chose the best dog food brands

The Good Housekeeping Institute reviews all kinds of pet products, including food-based products like dog treats and dog supplements .

We test brands with our Lab experts who have dogs, send brands out to tester families and read through hundreds of online reviews to understand real-life usage. We also scour each product's ingredient list and check and double-check to be sure each dog food is available no matter where you live in the U.S. For this story we also consulted two veterinarians to ensure that we're only recommending the safest and healthiest dog foods.

Our final list consists of reliable brands we trust, veterinarian-recommended products and our Good Housekeeping pros' favorites. Each brand meets nutritional requirements set by the Association of American Feed Control (AAFCO) to ensure that your pet will have all the nutrients for their life stage.

What to consider when shopping for the best dog food

Dogs need animal protein — even if you're a vegetarian, your dog can not be. But grains, fruits and vegetables are all perfectly okay to be in your dog's food along with the meat, poultry or fish that is their main sustenance.

✔️ Trust the vet: "Your veterinarian knows your dog's specific needs and can provide valuable guidance on selecting the right dog food," Dr. Caos says. "They can consider factors like age, breed, size, activity level and any health conditions in order to recommend an appropriate diet."

✔️ Your dog will have opinions: You can lead a dog to a premium kibble but you can't necessarily make it eat. You may need to try a few flavors to hit on what they love, so buy a small bag when you're trying a new dog food .

✔️ Find a formula that fits them: While puppy food may be formulated to support their growth, senior dog food is created to help their joints, bone and skin as they get old. The American Kennel Club notes that large dogs can be more prone to musculoskeletal problems than their small breed counterparts, so you'll want to ensure that you're purchasing dog food specifically for large breeds if you've got one, since it has a different balance of nutrients. Smaller dogs, meanwhile, benefit from a food for them that has smaller kibble pieces that are easier for them to eat.

✔️ Check the ingredient list: " High-quality ingredients [should be] the primary components of the dog food," Dr. Cao says. "The first few ingredients should ideally be named animal protein sources, such as chicken, beef or fish. Avoid foods that list vague terms like 'meat meal' as the main protein source."

Your vet can also tell you if there's anything to avoid with your dog. For instance, most dogs don't need grain-free dog food, but some dogs do benefit from it. " If your dog has specific dietary restrictions or allergies, choose a food that accommodates those needs," Dr. Caos says. The FDA studied grain-free dog food to see if there was a link between it and canine heart disease; the study was inconclusive. A more recent study from the University of Missouri found no link between grain-free diets and the development of dilated cardiomyopathy (DCM). But to be safe, don't put your pet on a grain-free diet until you've received clearance from the veterinarian.

✔️ Get expert-formulated recipes: To ensure your pet is getting the healthiest (and tastiest) chow, you'll want to look for brands that use board-certified nutritionists to formulate the diet. This means they'll test for nutrient content and adequacy, and assess the food for contaminants. Most major brands do this.

How to read a dog food label

"Look for dog foods labeled as ' complete and balanced ' by reputable organizations like the Association of American Feed Control Officials (AAFCO)," says Dr. Caos. According to the AAFCO , when a dog food says it's “complete," it means it contains all of the nutrients you'll need for your pet at its life stage. "Balanced," on the other hand, means that those nutrients are in the right ratios. Different doggie life stages require different ratios of nutrients.

Here's a handy guide to know how much chicken is actually in that "chicken and rice" recipe:

If the ingredient is present in the name of the dog food, it must make up at least 95% of the food (not including water). If water is included in these numbers, then the combined ingredients in the name must make up at least 70% of the food . The ingredient listed first is the most prominent one in the recipe. So, if you're looking at "chicken and rice" dog food, at least 95% of the product by weight will be made up of both chicken and rice with the rest of the 5% comprised of vitamins and minerals to help your pup stay healthy. However, if the name of the food comes with a descriptor like "dinner," "platter" or "entrée," then the meat ingredients in the name must only make up 25% of the product . Finally, if it's described as "food with chicken," than chicken must only make up 3% of the food .

Ingredients are listed in descending order based on how much of the dog food they make up by weight.

Find feeding directions on the container to know how much food to pour for your pet based on their weight.

If you're in the market for dog food, you've probably heard two of the most common buzzwords: grain-free and human-grade .

"There is no reliable evidence that suggests that it is harmful to feed grains to dogs," according to what the Clinical Nutrition Team at Tufts University Cummings Veterinary Medical Center wrote on their blog . "Whole grains, rather than being 'fillers,' can contribute valuable nutrients." Dr. Caos notes that while some pets thrive on grain-free diets, others need healthy whole grains. "The decision between grain-free formulas should be based on careful consideration of your dog's nutritional needs, health status and professional guidance from a veterinarian or veterinary nutritionist," he says. Similarly, human-grade food signifies that the ingredients all meet federal regulations for humans, but according to AAFCO, just because the food is human-grade does not mean it is nutritionally best (or safe) for your dog.

How to help your pet adjust to a new food

If you have made the decision to switch your dog's food to a new brand, it may seem like a daunting task to get them on board with the change. To make it go smoothly:

  • Transition slowly: One of the things that may prevent your pet from getting acclimated to a new food is a too-abrupt transition. "Gradually introduce the new food by mixing small amounts of it with the old food over a period of about seven to 10 days," Dr. Caos says. "Start with a small proportion of the new food and gradually increase the amount while decreasing the old food. This allows your pet's digestive system to adjust."
  • Monitor your pet's response: Keep an even closer eye than usual on your dog's behavior and note any physical changes, like their appetite, energy level and more. "If you notice any concerning symptoms or persistent issues, consult with your veterinarian for further guidance," Dr. Caos says.
  • Try some variety: Picky eaters may take a bit longer to warm up to new flavors and smells. "Consider offering different flavors or varieties of the new food to see if there's a particular one your pet prefers," Dr. Caos says. "You can also try warming the food slightly or adding a small amount of low-sodium chicken broth or water to enhance palatability."
  • Chat with your vet: "If your pet continues to have difficulty adjusting to the new food, it's advisable to consult with your veterinarian," Dr. Caos explains. They should be able to offer personalized recommendations.

The concept of a restaurant within a restaurant has found its niche in Columbia. Enter Cured, an upscale bistro, and explore a mecca of cocktails and comfort food. A telltale unmarked door opens to a 1920s-style jazz club. Dim lights, dark corners and art deco surroundings set the stage at 18th & 21st, a speakeasy throwback that takes its name from the constitutional amendments that enacted and repealed Prohibition.

Each venue has its own menu. Fans of Cured favor the Philly cheesesteak egg rolls, while burgers score high at the hideaway out back. Spirit-wise, both places offer their best-selling Smoked Old Fashioned, made of bourbon, brown-sugar syrup and house-smoked bitters.

The notion of two watering holes under one roof appeals to the clientele, said Vince Culotta, managing partner of both places.

JAM Eateries is a neighborhood brunch joint where patrons can enjoy brunch all day. Nestled on University Boulevard in Ellicott City, the restaurant overlooks a small pond along Snowden River Parkway.

Previously Eggspectation, the restaurant serves breakfast and lunch as well as craft cocktails, homemade Bloody Marys and inventive mimosas and features favorite menu items, including Bagel and Lox, JAMmin’ Signature Bloody Mary and Mimosa Flight as well as breakfast burritos and tacos, omelets, pancakes, shrimp and grits, waffles and more.

Jon Hickle, 63, of Woodbine, has served as president of Mid-Atlantic Eateries, which owns JAM Eateries, for 22 years.

Hickle, who owned and operated Eggspectation, said the restaurant was remodeled two years ago, making the space airier and lighter.

“The comments we get from our patrons are how good it makes them feel because it’s light and tranquil,” he said.

Hickle said it is special for the restaurant to be selected by readers as one of the best in the county.

“It says a lot for our customers to take the time to vote for us,” he said. “It makes the whole team feel appreciated and very proud of what we’re doing on a daily basis.”

As a child, Chad Wells enjoyed hanging around food.

“I was the one who liked sitting outside with my grandmom, on her farm in Jessup, picking the tops off of green beans,” he said. The kitchen was his chemistry lab, where he mixed and matched fixins’ to no end.

“Sometimes it worked and sometimes it was disgusting — but that’s how you learn to put ingredients together that makes sense,” said Wells, 43. As executive chef at Walker’s Tap & Table, in Glenwood, he keeps pushing the envelope, putting an offbeat spin on otherwise normal fare.

“We take comfort foods and turn them on their heads by thinking a little outside the box,” he said. Like the fried deviled eggs and Frito pie burgers; sloppy joe egg rolls and Cajun crab pizza; and smoked tomato soup with grilled cheese croutons.

“I want people to be excited about what they are going to eat — and we [strive] to exceed their expectations,” said Wells, former chef at Alewife, in Baltimore, who helped open Walker’s five years ago. “Plus, we’re relentless about making everything from scratch from fresh, local ingredients.”

New York-style delis thrive in, well, New York. But in western Howard County, with its checkered tracts of cows and posh colonials?

Rosie’s is bustling in the boonies. Having opened in January, the upscale deli has impressed patrons with its savory subs, coffee bar and homey feel, a turn-on for a fast-food joint these days.

“We try to get to know our guests and to give them a high level of hospitality in a deli atmosphere,” co-owner Anthony DiGangi said. Popular subs are Rosie’s Italian (named, like the deli, for DiGangi’s late mother) and the Bada Bing, a fresh fried chicken cutlet flanked by all the trimmings. Breakfast sandwiches draw early crowds.

The deli doubles as a market for Italian groceries, including salads and sliced meats. (Think: Dipasquale’s, of Baltimore, with free parking.) Rosie’s and its sister restaurant, Walker’s Tap & Table, bookend the same shopping center and share their kitchen maestro, Chad Wells, named best chef by Howard Magazine readers.

The staff swears by its checklist of how to please patrons, a handful of to-dos that have sent diners home happy.

“Some [customers] are really into food,” owner Binda Singh said. “For others, it’s ambience, service and hospitality.

“We nail all four things.”

In an opulent setting (6 rooms, 20 crystal chandeliers and 7 fireplaces), guests dine on dishes of lamb and lobster, crab and chicken, drenched in savory marinades and served by an attentive yet unobtrusive wait crew. Here, one gets hooked on Chilean sea bass with coconut sauce, or on the goat garam masala, curried with spices and yogurt.

Reservations are required and, on busy evenings, patrons who face untimely waits may receive a bottle of spirits, on the house, from the well-stocked bar filled with bourbons and such.

“We feel good when people come happy and leave extra happy,” said Singh, 39, who plans to open a second venue in Middletown by year’s end. “We want them to be our guests for life.”

The Collective Offshore is a lively restaurant bringing two new concepts to life. Nestled along the lakefront, the restaurant features vast views of Lake Kittamaqundi.

Serving seasonal coastal cuisine from Maine through the Carolinas, the restaurant features a range of lunch and dinner entrees including blackened fish tacos, buffalo fried chicken sandwiches, crab cake sandwiches, crab stuffed lobster risotto, grilled filet mignon, and saffron scampi seafood pasta.

The restaurant also runs the entertainment and live music venue, Encore, bringing local talent to Downtown Columbia.

Staci Samaras, 53, of Ellicott City, has served as co-owner and managing partner of the restaurant for one year.

Opened May 3, 2023, the restaurant stands out among other restaurants in the county, Samaras said, because of its location and sister business.

“We’re right at the Columbia lakefront, so we have incredible views from the main dining [room], the bar and the private dining rooms and we have a patio that’s full-service dining,” she said. “We also have the entertainment venue, Encore, that we operate as well.”

Samaras said she is excited that the restaurant was selected as one the best in the county.

“We’re thrilled because there were a bunch of restaurants that opened in Howard County this year,” she said. “For us to come out on top in a category that we could never win again is awesome and to be well-received as the best new restaurant, that’s just amazing.”
